Tofu serves as a perfect substitute for chicken, if you like you can prepare it as crunchy tofu nuggets, Moroccan chops in a lemon-lime sauce, or chopped up for Chinese food, in dishes such as Kung Pao tofu. It can also be ground to replace the ground meat in meatballs or tacos. PVT comes in all shapes and sizes and can replace any meat, including ground beef. Try it on a salad with blueberries and pistachios or on meatless tacos. The seitan can be flavored to have exactly the same flavor as beef or pork. Then I serve them with polenta, unless I stack them in a crusty roll to make a French Dip sandwich. Try to prepare a mushroom stroganoff or a vegetarian hamburger.
