I have some leftover cooked red beans from yesterday, so I wanted to make something from them before they went bad. I decide to make a vegan prahut and fry it with long beans and bread. The name of this snack is Khmer, but I donβt know how to call it in English.
Normally this recipe is made from many kinds of meat, but I am vegan, so I use beans and not meat. For the sauce I just have an idea to use every ingredient I had in the refrigerator. It was really delicious together.

Sauce Ingredients
- 2 tbsp tomato sauce
- 1 tbsp sambal oelek
- 1 tbsp hot sauce (optional)
- 1 tsp black bean garlic sauce
- 3 cloves garlic
- 1/2 tsp salt or taste
- 2 tbsp brown sugar or taste
- 1 tbsp water
- oil for frying
Chop garlic, then heat oil and fry garlic until brown. Add all ingredients and stir-fry well. Taste, itβs ready.
This sauce is tasty! My daughters said they can eat with rice every day.
Prahut Ingredients
- 1 1/2 cups red beans after cook
- 1 bunch of longbeans or other vegetables as you like
- 1 baguette
- 4 cloves garlic
- 1/2 tsp black pepper powder
- 4 tbsp tapioca flour
- 4 tbsp flour
- 1/2 tsp baking powder
- 1 tbsp oil
- 1 tsp salt
- 1 tbsp brown sugar
- 1 tbsp nutritional yeast (optional)
- 2 tbsp water
- oil for deep fry
Normally I use two teaspoons of soy sauce, but I ran out of soy sauce a week ago. All the stores in my area ran out too, but itβs okay without soy sauce. I added water for easier grinding. If we have soy sauce we donβt need water.
Put salt, sugar, back pepper, nutritional yeast, baking powder, oil, water and chop garlic in a bowl and stir it well.
Then grind it with red beans very well, after put it in a bowl add tapioca flour and mixed it well. Cut longbeans.
Heat oil and deep fry it with long beans and spread it on bread.
I love to fry it wit baby corn, okra or the other vegetables, but I have only longbeans now.
Prahut with bread is really delicious.
Have a beautiful day everybody and stay safe. πβ€οΈ

It is tasty, sambal oelek looks like Javanese chilli sauce
It was tasty! I don't know where this sambal come from, but I see on the lid of bottle there are Chinese letters and English. I thought it's from China because many ingredients are from China here in Suriname. Thank you.
