Salt and Pepper Squid
(Serves 6)Ingredients:
750g squid tubes
1 egg white
2 hot chillies, seeded and finely sliced
1/8 teaspoon pepper
1 clove garlic, crushed
1/2 teaspoon salt
2 cups peanut or light olive oil
Dry Ingredients:
3 tablespoon plain flour
3 tablespoons rice flour
1 tablespoon caster sugar
1/2 teaspoon white pepper
Steps:
- Cut the squid into strips
- Whisk the egg white with chillies, garlic, pepper and salt and marinate squid for at least 1 hour
- Sift dry ingredients well to combine. Heat oil in wok to very hot. Just before frying, drain the squid and dust with the flour mixture, then shake in a sieve to get rid of excess flour.
- Fry in batches until lightly golden. It should take 1 minute or less.
- Drain on absorbent paper. Serve and eat hot.
