Here is my favorite oatmeal raisin or oatmeal chocolate chip recipe. This recipe is the best because it's very easy and quick to make. It also has amazing flavor and texture which is a combination not easy to find anymore. I've modified the recipe and directions from food.com.
Here are some of the modifications i have made: I have been reducing the amount of flour so the resulting cookie is less dry. I have also cut down on the amount of oats so you can taste the flavors of the cookie more and not be overwhelmed with the bland flavor and texture of the oats themselves. Anyways, i hope you enjoy the recipe!
Recipe
Ingredients:
1/2c softened butter
1c packed brown sugar
1/2c granulated sugar
2 eggs
1tsp vanilla extract
1 1/2c all-purpose flour
1tsp baking soda
1/2tsp salt
2c old-fasioned Quaker Oats
1c raisins or chocolate chips
Directions:
-heat oven to 350F
-beat together butter and sugars until creamy
-add vanilla and beat eggs in one at a time
-mix four, baking soda, and salt in separate bowl
-slowly add in four mixture to other ingredients in 1/2c increments
-stir in oats and raisins (or chocolate chips)
-drop by tablespoons onto cookie sheet lined with parchment paper
-bake for about 10-12 minutes
(makes about 4 dozen)
Sounds tasty! Definitely chocolate chips over raisins though.
