This is another recipe from my mother's cook notebook - wheat bread on yeast. The bread in its performance always tastes to all friends. I decided to try my hand and I find that it is really simple and pleasant to make. Of course, the bread came out excellent and as you can see in the picture I could not let go, to eat a warm heel with butter.
Time of implementation: 4 h 30 min (including 3 h 30 min waiting)
Number of servings: loaf (form 22 x 27 cm)
Components:
- 1 kg of wheat flour
- 1 cup of rye flour
- 25 g of fresh yeast
- 500 ml lukewarm water (2 glasses)
- 200 g kefir
- 2 white egg
- 1 tablespoon of salt
- 50 g of margarine (not necessary)
Additionally:
- a teaspoon of butter to coat the mold
- black cumin
Step by step recipe for wheat bread
Make leaven for bread: To a large (8-10 l) pot pour a glass of wheat flour and a glass of rye flour, add the crushed yeast and pour a glass of warm water - mix everything thoroughly with a spoon. Cover the pot with a dishcloth and leave in a warm place for 1 hour to rise.
Add the rest of the product to the grout: pour in the rest of the flour, pour the kefir (at room temperature), add lukewarm margarine, protein, salt and pour water (if necessary, you can add more water - the less dough the better it will be made).
Knead the dough for 15 - 20 minutes
Wait for the dough to grow (about 1 hour 30 minutes)
Transfer to a baking tray greased and sprinkled with flour. Sprinkle the bread with black cumin and bake for 1 hour at 200 Celsius degrees.
