Blueberry Oatmeal Pancakes | 15 Minute Breakfast Idea for Busy Work Week

Hi guys,

I have the perfect recipe for you to treat yourself during a busy workweek. This recipe be made start to finish in 15 minutes or less. It is made with oatmeal instead of flour for added health benefits. The blueberries add a delicious sweet and tartness that compliments the pancakes perfectly. Enjoy!

Ingredients:

  • 1 C oatmeal
  • 2/3 C milk, non-dairy milk, or water
  • 2 spoons of honey, maple syrup, or agave nectar(adjust sweetness as desired)
  • dash of salt
  • 1/4 teaspoon baking powder
  • 2/3 C of frozen blueberries
  • A few teaspoons of butter or oil for cooking

Instructions:

  • Combine oatmeal, sweetener, and milk in blender. Blend until oatmeal is ground up and everything is combined.
  • Pour into a preheated pan
  • Cook on medium to medium-high heat until brown and crispy on each side
  • Warm/thaw frozen blueberries in microwave or on stove in separate pan
  • When pancakes are done, layer with blueberries and serve. Enjoy!
    Optional: drizzle pancakes with syrup or other desired sweetener and butter

This recipe makes 1-2 servings.

I have yet to try them, but at the very least I will get the ingredients for the chocolate pretzels and almonds, it is so easy, I really have no excuse to not try it out :D.

Your photos look so delicious it makes me want to try things that I normally don't eat like olives and blueberries. I love cooking, but I am a very unhealthy eater ^^*.

I just did them, they are great!

It's a great idea to make pancake batter from oatmeal. Mine were a little thinner than yours, but they were lovely. Silky texture almost like crepes. Best thing about them is that i get some needed fibre in my diet.
I ate them with rice pudding and the blue berries on top. It was awesome, whip cream will be even better i feel. You can eat them with only berries, its a little sour, but also a great snack.

I needed to let the batter rest for about 10 minutes after mixing it for it firm up, does that happen to you as well?

Edit: The best thing about them is how easy and fast they are done. Almost forgot to mention that.

Mine firmed up pretty quickly when I added the milk, I think because my oats soaked up the milk really fast. Im really happy to have those in my repertoire now. They are easier and healthier than classic pancakes, but I feel like you could do all the good things with them: chocolate banana, whipped cream and fruit (blueberries ;), applesauce or just plain sugar and cinnamon.

Those are great ideas! Now Im hungry. haha gonna have to try those variations.

Can I use sugar instead of syrup or honey? I rarely use syrup or honey so I dont have it at home.

I forgot i got no baking powder.:( I just saw some fresh blueberries this morning so i got oatmeal and thought I'm set. I also remembered you saying something about "sweetener to your like", so i expected sugar would be fine, already ;). Anyways, I got to do them tomorrow. Today is such a nice hot day, it would have been great to eat something fruity :(

btw fresh blueberries work, right? Should the blueberries be hot/heated when you put them on the pancakes or are they good cold (out of fridge ~7°C)?

Fresh/cold blueberries work well too! This recipe is customizable. The baking powder helps the pancakes fluff up a little. Although because it uses oatmeal instead of flour, they are a little denser than flour pancakes.

I dont want to customize the recipe too much on the first try, so I rather buy the baking powder tomorrow. For future experiments I could see vanilla sauce or whipped cream with the blueberries... unhealthy but that tastes good in my head already :D

I updated the about of baking powder in the recipe. Use 1/4 teaspoon instead of 1/2.
