A quick post for you guys today with a meal inspiration.
One of the foods I have been enjoying immensely lately are Tortilla Wraps.
They are great as you can fill them with pretty much ANYTHING and either roll ‘em up (burrito style) or fold ‘em over (quesadilla style).
Personally, I usually go with the whole-grain/wholemeal version because I like the taste and texture more than the classical wheat tortilla. There is a brand of veggie-based tortillas I sometimes buy if I fancy a bit of a different flavor (check out the company “No Fairytales”), however, their tortillas are a wee bit smaller and are better for alternative thin-crust pizzas (this is for another post though, so stay tuned ;) )
Anyyyyywhoooo, to get on with it, here are two meal ideas for a delicious, nutritious and filling burrito and quesadilla.
Breakfast Burrito
You’ll need:
-1 whole-grain tortilla
-scrambled eggs (from 2 eggs)
-1 or 2 slices fried turkey bacon
-cream cheese of your choice
-handful fresh baby spinach
-grated cheddar cheese (I sometimes do them without the extra cheese)
Prep:
Spread the cream cheese on the tortilla, then add the spinach and top with (previously cooked) bacon, scrambled eggs, and lastly, as much cheese as you like.
Fold the tortilla like so:

Last step - and this is important - heat a frying pan (do not add fat or oil) and place the burrito in the hot pan, leave until crispy brown and flip over. The browning makes a huge difference to the taste, trust me!
And voila, a yummy breakfast burrito that can be eaten for lunch or dinner also :)

Beef Quesadilla
Another good option that is a bit more hearty.
You’ll need:
-1 whole-grain tortilla
-salsa (medium hotness. I use a readymade salsa from the glass)
-fried ground/minced beef
-various sauteed or boiled vegetables (fresh or frozen) e.g. onions, peppers and corn (I used carrots, peas, green beans, and corn)
-and of course grated cheddar cheese
Prep:
Spread the salsa on the tortilla. As this is quesadilla style (well, a half quesadilla), add the toppings only on one half of the tortilla, as shown here:
Then close the quesadilla and, as in the above recipe, brown both sides in a dry frying pan until crispy.
Cut into triangles and eeeeenjoooooy!

Haha true, looking doesn't hurt ;) but these burritos are quite nutritious and you can prepare them so they fit into a healthy diet, just experiment with different ingredients :)
