Ingredients:

- 4 Roma tomatoes, boiled

- 2 jalapeños

- 3 Chile sanos (optional for milder taste)

- 1/4 of a large onion, plus another half onion

- 2 garlic cloves

- 1/2 cup of water

- 1 tablespoon chicken bouillon

- 1 teaspoon oregano

- Oil, for sautéing

- 2 lbs of lean ground beef

- 1 tablespoon chili powder

- 2 teaspoons garlic powder

- Granulated cumin, to taste

- Onion powder, to taste

- Black pepper, to taste

- Salt, to taste

- 3 potatoes, diced

- 8 oz of baby carrots

- 1/4 cup of tomato sauce

- 2 cavitas (squash), cubed

- 1 cup of corn

- 1 cup of peas

Cook Time: 30 minutes

Total Time: 40 minutes

Servings: 6-8

Equipment:

- Skillet

- Cooking spoon

Instructions:

1. In a blender, combine the boiled Roma tomatoes, jalapeños, Chile sanos, 1/4 onion, garlic cloves, water, chicken bouillon, and oregano. Blend until smooth to make the sauce.

2. Heat a little bit of oil in a skillet over medium-high heat. Add the half onion and sauté for a couple of minutes.

3. Add the ground beef to the skillet. Season with chili powder, garlic powder, cumin, onion powder, black pepper, and salt. Cook the beef until browned, breaking it apart as it cooks.

4. Mix in the diced potatoes and baby carrots. Allow to cook for 5 minutes.

5. Pour the sauce over the beef mixture. Rinse the blender cup with a little more water and add this water to the skillet along with the tomato sauce. Bring everything to a simmer.

6. Taste the sauce and adjust salt as necessary.

7. Add the cubed cavitas, corn, and peas. Stir well to combine and let the dish cook for another 7 to 10 minutes, or until the potatoes and carrots are fully cooked.

8. Check the potatoes and carrots for doneness by poking them with a fork; they should be soft.

9. Serve the Picadillo hot and enjoy every flavorful bite!
