PABELLÓN CRIOLLO
Ingredients for 6 people
2 cups of rice
1 Kg of meat for mecha
1/2 Kg of black beans
1 ripe banana
1 maggi cube or salt
1 round onion
1/2 Paprika
2 cloves of garlic
1/2 ajo porro
2 sweet chilli
coriander
long onion (cebollin)
1 bay leaf
1 teaspoon ground cumin
Enough oil to fry the bananas
Preparation
1.-Boil enough water in a pot to cover the beans, then add the maggi cube or salt, then the rib, cook
until they are soft (about 30 minutes)
2.-On the other hand make a stir-fry with the oil, the onions chopped in squares, the paprika, the long onion, the cilantro, the bay leaf and the garlic
3.-Add the sofrito to the preparation of caraotas with the teaspoon of cumin and cook over medium heat for 25 minutes more
4.-Parboil the meat (beef skirt) with a little salt, cook until it is soft, then remove, cool and fray the meat, reserve
5.-In a pot or pan place onions, peppers and tomato cut into julienne, add the frayed meat and finally stir and cook to form a kind of sauce
6.-In another pot place 2 cups of rice with 4 cups of water (2 cups of water for 1 of rice), add a pinch of salt and boil over medium heat until it is almost cooked with a wooden spoon stir a little then put it over low heat and put the lid on it. After 3 to 5 minutes the rice is ready
7.-Slicing bananas with long cuts and frying
8.-On a flat plate place a portion of banana, one of beans, one of meat and one of white rice
