Hi guys here is another Keto friendly recipe from yours truly. In a Ketogenic diet is not always about eating a lot of meat or fat. Sometimes you also need something that fits a Ketogenic lifestyle and still be able to satisfy your sweet tooth. I present you my version of the Keto Chia pudding using Coconut milk.

The two main ingredients of this recipe is coconut milk and and Chia seeds (Get Ready for a science bomb from someone who is not a scientist or nutritionist YEAH!!!). Coconut milk will be our liquid in this recipe and contains the beneficial fat called Lauric Acid, a medium-chain fatty acid which can be used by the body for energy in the absence of carbohydrates in a Ketogenic lifestyle.  Consuming Coconut milk is known (Claimed!!!) to help in controlling blood pressure, cholesterol, and may even prevent heart attacks and strokes. While consuming chia seeds is a rich source of thiamine and niacin, and a moderate source of riboflavin and folate (A bunch of chemicals I have no idea about but sounds really important so Yeah Go Chia seeds!!!!). Chia seeds is also a good source ofcalcium, iron, magnesium, manganese, phosphorus and zinc. Wikipedia

Ingredients (Creates around 6 servings)

  1. 50 grams or 1/3 cup of Chia seeds
  2. 400 ML or 1 and 2/3 cup of Coconut milk.
  3. Sweetener of your choice here I am using 20 drops of Stevia and a 6 table spoons of sugar free maple syrup (Its really hard to get keto stuff here in our country so I am working with what I got).




Steps

  1. Add your coconut milk in a container.
  2. Add the sweetener of your choice to the coconut milk and give it a good mix.
  3. Add your Chia seeds in the mixture until all the Chia seeds are incorporated.
  4. Place the mixture in your fridge and let it soak from 4 to 24 hours.
  5. Serve and enjoy. Optionally you may want to top it with whipped cream and additional syrup or sweetener.
