HIVEryone!!!! Sharing you again another homemade recipe. This is my original Chico Pancake.
One of the best day to have a hot pancake is morning for and every home there's always someone loves to have it for breakfast paired with hot coffee, hot milk or hot choco.
Since my childhood days, everyone in our family loves pancake and is one of my all time favorite. Now I had created my own special version and I want to share with you this recipe, sharing is caring!😘

Ingredients:
1 Cup All Purpose Flour
3/4 tsp Baking Powder
1/4 tsp cinnamon powder / vanilla extract
Pinch of salt
3/4 Cup Fresh Milk/Evaporated Milk
1 Large Egg
2 tbsp Butter / Cooking Oil
200 grams of blended Chico
Now here's the exciting part! 😊
Procedure:
- In a large bowl mix together the flour, baking powder, cinnamon and salt with a wooden spoon. Set to the side.
- In a smaller bowl crack in the egg, pour in the milk and blended chico.
- Add the melted butter to the egg, milk and chico, use a fork to mix together until everything is well combined.
- Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
- To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and 1/3 cup of the pancakes batter.
- Cook the pancake for 2-3 minutes each side. Repeat with remaining batter.
- Serve the pancakes stacked high with butter and maple syrup or just condensed milk. Enjoy.
Note:
You can add other flavorings to the pancakes such as chocolate chips. Add the extra ingredients at the same time as you combine the wet and dry ingredients.
Most Pancake have added sugar on the ingredients but for my pancake no sugar, ripe Chico are already naturally sweet and it is enough to balance the sweetness together with the condensed milk. I also use Cinnamon instead of Vanilla but either of the two you can use it anyway, If I use both I might over-power the taste.
The taste and soft texture like pudding makes you want to eat more!
