Hi vegan lovers, it's great to be back again sharing one of the simple sweet potato recipes. Again, sweet potatoes are a very innovative dish whether used as a side dish to enjoy warm white rice or as a simple snack that lasts a long time and can be taken anywhere you go when you are traveling with your family. Now this sweet potato preparation is known as fried sweet potato with orange leaves, processed in an easy way with a combination of sweet potatoes and peanuts that have a strong aroma of orange leaves.
This recipe was actually inspired by a neighbor's house who made a big celebration at her house, so at that time my mother brought the menu home a little. When I tried it, it tasted amazingly delicious, crispy and savory. But there is a slight difference in the recipe that they make they add non-vegan ingredients such as small dried fish that are fried crispy too.
Ingredients Used
10 orange leaves
1 turmeric leaf (optional)
50 grams peanuts
1 teaspoon sugar
¼ teaspoon salt
5 red chili peppers
2 cloves shallots
2 cloves of garlic
Cooking Procedure
Preparations made to make orange leaf fried sweet potatoes, my preparation steps start by cleaning the sweet potatoes first by peeling the skin.
After peeling and washing again until clean, continue to slice the sweet potato manually with an elongated grater like a stick.
Fry the sweet potatoes in plenty of oil using low heat until brownish yellow.
While frying the sweet potatoes I sliced the turmeric leaves and also thinly sliced lime leaves.
Continue to slice the chili peppers lengthwise, continue with thinly sliced onions.
Now next I also fried peanuts, fried with a little oil until brownish yellow.
After everything is fried, I sautéed onions and chilies in a little cooking oil.
Saute until wilted, then enter the orange leaves and add turmeric that has been chopped, fry until all ingredients are dry.
Next I add salt and sugar, stir until evenly distributed, wait a minute and then add the sweet potato and kcang that has been fried.
Result
The sweet potato is fried crispy and not hard at all, and the result is like very small fried noodles. But what is unique here is that the natural sweet potato flavor is still very strong in this dish. So when combined with other ingredients, the combination of peanuts is very tempting there is a perfect blend of savory, sweet and of course peanut fat. In my opinion, even without dried fish, this is already very tasty, indeed, it is very suitable as a lunch to take anywhere.
There is something that is my favorite in this menu, namely the aroma and taste of orange leaves really has an unforgettable characteristic, the taste and aroma cannot lie if I will definitely make this recipe repeatedly at home.
Now here I suggest that you store this in an airtight jar so that the crunchiness of the sweet potato will always be maintained in quality, therefore paying attention to the storage container after frying is very much needed here.
