Today I am going to share a recipe full of taste, health and happiness.
This is cucumber vegetable or curry which we called kakdi in our language. It is full of happiness because it comes from our farm...And that too the first crop of the farm...So it is full of happiness, isn't it?
And along with it is loaded with nutritions. It contains potassium , phosphorus and many more. Which is really good for health. And it's taste is also awesome. I also cook it in the clay pot which is also a healthy cooking method.
We can eat it as a salad or we can cook it and make delicious Curry. There are many ways to make the curry. We can simply make it with some herbs or make it with tomato. This time i simply made it with some herbs in the clay pot. Which we can enjoy with hot chapati for lunch or dinner.

INGREDIENTS โ
- Green cucumber/ kakadi 5 piece
- Green chilli 1
- Oil 1 tsp
- Cumin seeds 1 tsp
- Hing one pinch
- Salt to taste
- Red chilli powder 4 tsp
- Turmeric powder 1 tbsp
- Coriander powder 2 tbsp
- Dry mango powder 1 tsp
METHOD โ
Step 1 :
First wash the kakdi and cut into small pieces like this.
Put all pieces in a bowl and wash one more time and starin the water with the help of strainer.
Step 2 :
Now take a clay pot and heat the oil. In clay pot we need minimum oil. Add 1 tsp oil and heat on the low flame. Add cumin seeds and hing ... when seeds start to crackle add cucumber pieces in it.
Than give it a good mix and add salt and turmeric, sauted it and cover it with a lid or plate. Cook it for 5-7 minutes on medium flame. In the clay pot vegetable takes more time to cook .... it's also depend on the chopping and the quality of the vegetables.
Step 3 :
After 5-7 minutes add all spices and green chilli, give it a nice mix and again cook for 4-6 minutes. Add little water also.
Check it , if cucumber cooked 95% than turn off the flame. In clay pot process of cooking lasts for the next 2-3 minutes.
Healthy and delicious cucumber vegetable is ready to enjoy.
