pumpkin and apple muffins

Hello, community! Greetings! This is my first recipe post in this community.

Last month, after making pumpkin soup, I had some leftover pumpkin. Additionally, I had some apples from the garden harvest in the fridge that I needed to utilize before they went bad. So, I created a recipe for making muffins using these ingredients and would like to share it with you. It is very simple but delicious for coffee or tea time

Ingredients
1 cup pumpkin puree
2 eggs
1 cup sugar
1/4 cup avocado oil
2 cup chopped apples
1 tsp vanilla
2 slices of frozen lemon
1 cup milk

Spices:
1 tsp cinnamon powder
1 tsp ginger powder
1/2 tsp cloves
1/2 tsp nutmeg powder
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tbsp dried black currant

2 cups of flour

Mix all dry ingredients in a bowl
Mixing flour, sugar and spices baking powder etc.

in another bowl mix eggs, and pumpkin puree, and beat it using a hand mixer.

While beating add the oil gradually.

Add vanilla

then milk. Mix it thoroughly.

now prepared dry ingredients and wet ingredients are ready to mix.

pour the wet ingredients into the dry ingredients and mix them very lightly preferably with the cut-and-fold method.

Add chopped lemon slices.

Add chopped apples.

Just mix them very carefully not overdoing it.

prepare the muffin pan. i prefer using molds but it is not necessary

Fill them with batter.

For topping I used a few dried black currants

They are ready to bake.

Bake them at 180 C preheated oven for around 25-30 minutes.

And here is the final result nice soft delicious muffins for coffee or tea, or smart traveling food.

That like a fantastic and resourceful recipe! Using leftover pumpkin and fresh apples from your garden must have added a wonderful flavor to the muffins.
