Today's appointment with your son-in-law's relatives isn't just a simple meeting, but a significant act of kindness: giving them three cows from their garden to continue raising without any trading.
This decision comes from understanding the recent severe flooding that has damaged the surrounding area and killed all the grass for the animals. Sharing during this difficult time truly reflects the deep generosity of family.
After taking care of the cows, it's time for the second task: creating a delicious lunch for the visitors. Without delay, you head to the village shop to find the main ingredient for today's menu: "Pork Bone Curry," also known for its spicy southern flavor.

🍲 Special Lunch Menu: Pork Bone Curry 🌶️

I chose pork bones and pork with skin, combining them to achieve both the sweet and tender flavor of the bones and the chewy texture of the meat and skin. I also added ready-made curry paste and shrimp paste, the heart of Southern Thai curry.
Even though I was in a hurry to get to the kitchen, I still had to prioritize housework, take care of my mother, and the pets. This routine demonstrates my responsibility and attention to every detail in life. Once everything was in place, I headed straight into the kitchen, cooked rice, washed the dishes, and prepared all the ingredients to start making this special dish.

📝 ## Recipe and Method for Rich Pork Bone Curry
This dish focuses on the delicious flavors of pork and pork bones, simmered until tender, and the intense flavors of the curry paste, perfectly blended with shrimp paste.

Ingredients

Pork ribs and pork with skin (cut into bite-sized pieces): 500 grams (combined)
Prepared Southern Thai red curry paste: 100 grams (adjust to your preferred level of spiciness)
Good quality shrimp paste: 1 tablespoon
1.5 liters water or mortar water (if using homemade curry paste) (or enough to cover the pork bones)
2 tablespoons fish sauce (for seasoning)
Palm sugar or granulated sugar: a little (about 1/2 teaspoon to balance the flavor)
5 kaffir lime leaves (tear off the stems to enhance the aroma)

How to make it:

Prepare the pork and bones
Clean the pork bones and meat thoroughly and drain. To make the pork bones tender faster, boil them in boiling water for about 5 minutes. Remove and rinse with cold water (this will remove any blood or dirt) before using in the curry.
Dissolve the curry paste.
Place a pot with a small amount of water (about half a cup) and add the southern red curry paste and shrimp paste. Dissolve the curry paste until well combined and fragrant. Boiling water will enhance the aroma at this stage, but this southern curry recipe calls for a full boil.
Simmer the pork bones.
Once the curry paste is fragrant, add the remaining water and bring to a boil.
Add all the pork bones and pork with skin.

Reduce the heat to medium-low, cover, and simmer for at least 45 minutes to 1 hour to allow the pork bones to become tender and the flavors of the curry paste to permeate the meat.

Season and add aroma.
Once the pork bones are tender to your liking, open the lid and taste.
Season with fish sauce and a little palm sugar/granulated sugar (the main flavor of the curry is salty and spicy, followed by a slight sweetness).
Add the prepared shredded kaffir lime leaves and mix well.

Ready to serve
Ladle this rich and flavorful pork bone curry into a bowl and serve with hot steamed rice and perhaps some fresh vegetables for a perfect lunch for visiting relatives.
