Butternut Fritters with Maple Syrup

I was just about to make a batch of Butternut fritters and I thought I’d share this yummy snack with you too!

My daughter has been begging me to make them for a few weeks and I’ve just been too preoccupied. So I finally got a 1 kg bag of pre-cut butternut to make it all a little easier. They can be eaten as a healthy sweet treat by adding maple syrup and creamed cottage cheese (my favourite way to serve them) or savoury as an addition to a meal or barbecue.

They’re absolutely more-ish!

Here’s how to make them…

Butternut Fritters

INGREDIENTS
1kg peeled & cubed Butternut
1.5 cups All Purpose Flour (Self Raising in South Africa)
2 eggs
1 Tbsp Oil of your choice (I used a canola oil)

METHOD
Steam the butternut until well cooked. I steam the butternut in the microwave in the bag for 15 minutes and simply pierce the bag to allow steam to escape.

The butternut should be completely soft and just holding its shape.

Use a hand blender or masher to blend the butternut to a fine purée.

Allow to cool slightly before adding the flour and eggs. If the butternut is too hot then the egg will cook and not blend with the flour and butternut.

Mix well so that there are no lumps.

Add a small amount of oil to a non-stick pan and allow to heat to a medium-low heat.

Add large spoonfuls of the butternut batter into your pan and allow to cook for 1-2 minutes.

As the edge turns golden you can flip the fritter to fry the other side. Roughly 30 seconds to a minute.

Add a drop of oil if needed to continue the frying process between batches.

SERVE
Serve these wonderful golden fritters with creamed cottage cheese and drizzled with maple syrup as a sweet stack for a wonderful afternoon treat.

Notes:
You can substitute butternut with pumpkin.
The fritters can be served on their own or as an accompaniment to a savoury meal.

Let me know if you give them a try. This is such a simple, inexpensive treat. And for the homesteaders it would be a fantastic use for those pumpkins or butternut popping up in the garden. All you need are pantry staples.

Well, that's quite an interesting way to use butternuts. Pretty close to where I live there are many people who grow them and the harvest is only in a few weeks so I will definitely try your recipe, I think I already remembered it by heart :)
As I will be using a regular flour, I suppose I have to add one teaspoon of baking powder?
Also, as I generally avoid using the microwave, I guess I should boil it instead? What would you recommend?

Hi! Oh that’s so brilliant to have your own butternut. I wish I had more space to grow more at home. Boiling will work very well. Just drain the butternut well to remove excess water. You can also probably just use a plain flour and it shouldn’t make too much difference. But a ½ tsp baking powder should give the same effect as the Self raising flour. My mom has made this recipe all my life and I couldn’t make it without sharing. It’s just so simple. Hope yours turn out well!

0mgomg yumyumyum! my mom makes these. She calls them pumpkin fritters, but samesame. Delish!!! Great as a sweet treat or side to a savoury dish. Try sprinkling them with cinnamon sugar! !Luv

Yes!!! Same same. I just use whatever I happen to have - butternut or pumpkin are both perfect. And YES to the cinnamon and sugar. My mom loves that too!!!!!
