Hello HIVE Family and passionate about desserts today want to share a special creation made with one of the fruits that I love known in Venezuela as POMALACA and its scientific name is (SYZYGIUM MALACCENSE), is very juicy and has a unique flavor between acid and sweet, has a soft texture that is easy to bite without making noise and provides very good benefits to the human body, such as calcium, iron, vitamin B3, C and phosphorus that provides nutrient that benefits the body.
El postre es un bizcocho sencillo con sabor a pomalaca, decorado con dulce caramelizado de pomalaca utilizando los siguientes ingredientes para 12 cupcakes:
The dessert is a simple cupcake with pomalaca flavor, decorated with caramelized pomalaca candy using the following ingredients for 12 cupcakes:
650g de azúcar
200g de mantequilla
2 huevos
500g harina de trigo
400g de pomalaca
8 galletas de chocolates
650g sugar
200g butter
2 eggs
500g wheat flour
400g of pomalaca
8 chocolate cookies
Paso: 1
Picamos las pomalacas por la mitas retirando la semilla, y cada mita se pica en juliana en forma de luna retirando las puntas, luego una mitas se coloca a hervir con 50g de azúcar por 10 minutos retiras del fuego y dejar reposar hasta que enfrié para luego licuar en la licuadora sin colarlo; este será nuestro liquido para darle sabor al bizcocho.
Step 1
We chop the pomalacas by the mitas removing the seed, and each mita is chopped in julienne in the form of moon removing the tips, then a mitas is placed to boil with 50g of sugar for 10 minutes remove from heat and let stand until cool and then blend in a blender without straining it; this will be our liquid to flavor the cake.
Paso: 2
Se coloca a cocinar a fuego lento 200g de azúcar con 100ml de agua para crear una caramelo cuando, comience a sentirse un poco espesa, la otra mitas de la pomalaca picada se le agrega para que se cocine con el caramelo, removemos dejar cocinar por 5 minuto a fuego lento, se debe respetar el tiempo para que la tiras de la fruta no se ablande mucho y el azúcar se pase de cocción.
Step 2
Put to simmer 200g of sugar with 100ml of water to create a caramel when it begins to feel a little thick, the other half of the chopped pomalaca is added to cook with the caramel, stir and let it cook for 5 minutes over low heat, the time must be respected so that the strips of fruit does not soften too much and the sugar overcooks.

Elaboración del bizcocho: En un bol agregamos 200g mantequilla, 400g de azúcar y batimos hasta que la mezcla esponje y procede añadir un huevo mezcla y agrega el otro huevo; luego agrega la 250g harina de trigo una taza de jugo de pomalaca ya licuado, bate con una paleta suavemente para evitar grumo de quedar bate al final con fuerza en forma circular con la paleta inclinada en forma diagonal y agrega los últimos 250g de harina de trigo y una taza de jugo pomalaca y repite el proceso para mezclar todos los ingrediente.
Step 3.
Preparation of the sponge cake: In a bowl add 200g butter, 400g sugar and beat until the mixture fluffs and proceed to add an egg mix and add the other egg; then add the 250g wheat flour one cup of pomalaca juice already liquefied, beat with a paddle gently to avoid lumps to remain beat at the end with force in circular form with the paddle inclined diagonally and add the last 250g wheat flour and one cup of pomalaca juice and repeat the process to mix all the ingredients.

Encendemos el horno para que caliente; engrasa con mantequilla las bandejas de cupcakes o coloca los capacillos en las bandejas de cupcakes, agrega mezcla dependiendo del molde solo deja 8cm sin llenar bajo el nivel de los molde colocamos la mitad de una galleta retirando la masa de chocolate en el centro y presionamos hasta llegar al fondo, llevamos al horno a 200°, por 35 minutos verificando que quede bien horneado y atento de que no se pase de cocción recuerde que todos los hornos son distinto por eso unos pueden ser más rápidos que otros.

Turn on the oven to heat; grease with butter the cupcake pans or place the layers in the cupcake trays, add mixture depending on the mold just leave 8cm without filling under the level of the molds place half a cookie removing the chocolate dough in the center and press to reach the bottom, take to oven at 200 °, for 35 minutes checking that it is well baked and attentive to not overcook remember that all ovens are different so some may be faster than others.

Mientras se hornean los cupcakes podemos procesar las galletas restante, retiramos la masa de chocolate que tengan en el centro, trituramos las galletas y con la masa de chocolate puedes hacer espirales para decorar, al terminar la cocción de los bizcocho dejamos enfriar por 15 minutos.

While the cupcakes are baking we can process the remaining cookies, remove the chocolate dough in the center, crush the cookies and with the chocolate dough you can make spirals to decorate, when the cupcakes are finished baking let them cool for 15 minutes.
Paso: 6
En la decoración cada cupcakes se cubre con el almíbar de pomalaca con un cuchillo de mesa, luego lo pasas por las galletas triturada para que se peque, y decoras con las tillas de pomalaca en almíbar enrollándolas para crear especies de flores y colocas los espirales de chocolate y están listos para disfrutarlos con amigos y familia.
Step: 6
To decorate each cupcake, cover it with the pomalaca syrup with a table knife, then pass it through the crushed cookies to make it small, and decorate it with the pomalaca syrup, rolling them to create flowers and place the chocolate spirals and they are ready to enjoy them with friends and family.
