Hola hola amigos, me complace compartir con ustedes el proceso de decoración de una meme cake! Les cuento que capturar este momento para mí es muy difícil ya que soy mi misma fotógrafa y me concentro tanto en lo que estoy haciendo que me olvido por completo de tomar fotos.
Está torta la decore hoy mismo, es una decoración sencilla pero que solicitan mucho ya que se puede agregar mensajes personalizados.
Ingredientes del merengue italiano:
- 100 g de claras
- 100 g de agua (pesados)
- 200 g de azúcar
- 8 cc de vinagre
- 20 gotas de vinagre
- 3 cc de esencia de vainilla
Pese las claras, lleve al bold de la batidora y en una olla agregue el agua con el 80% del azúcar y 8 cc de vinagre, lleve a fuego bajo, mientras se hacia el almíbar, encendi la batidora en nivel 3, cuando empezó a hacer las primeras espumas agregue las 20 gotas de vinagre a las claras
Cuando las claras están firmes, es momento de agregar 20% restante del azúcar en forma de lluvia, y en este momento el almíbar está próximo a tener los 118 grados , par verificar utilizo un termómetro de cocina.
Cuando está a est temperatura aumento la velocidad de la batidora y agrego en forma de hilo el almíbar , seguidamente agrego la esencia, al apagar mezclo con la paleta y llevo a una manga pastelera.
Agrego el merengue, aliso con una espátula angular y termino de alisar con un scrapers liso ya que así era el modelo solicitado por el cliente.
Seguidamente con arequipe pintado de negro, empiezo a dibujar y a escribir a mano Lozada sobre la torta, agregue unos corazones con merengue y pinte con polvo dorado los bordes.
Es un trabajo muy entretenido para mí, trato de hacerlo lo mejor posible y es muy gratificante lograr o superar lo solicitado por mis clientes, definitivamente la repostería si es lo mío! Al menos disfruto de todo este proceso! 😃

When it is at this temperature I increase the speed of the mixer and add the syrup in the form of thread, then I add the essence, when I turn it off I mix with the paddle and take it to a piping bag.
I add the meringue, smooth with an angular spatula and finish smoothing with a smooth scrapers since this was the model requested by the client.
Then with arequipe painted black, I start to draw and write by hand Lozada on the cake, add some hearts with meringue and paint with gold dust on the edges.
It's a very entertaining job for me, I try to do my best and it's very rewarding to achieve or exceed what my clients requested, definitely baking is my thing! At least I enjoy this whole process! 😃
