Remolachas Encurtidas, which are perfect to accompany a good sandwich and why not, a rich burger.



The first time I tried pickled beets, was about 10 years ago at a friend's house whose husband is Syrian and consumed this in industrial quantities, I remember that she prepared a delicious Kefir and we prepared some delicious shawarmas to which we added kefir and pickled beets, the contrast of flavors is really delicious. Unfortunately in my country, pickled beets are not at all common to see, and very difficult to find in a supermarket so, if you want to consume them, you must prepare them yourself usually.



The sweet taste of the beets, with the acid of the vinegar and the combination of flavors of the spices is really delicious, join me and I'll show you how I prepare them.

Ingredients

  • 2 medium beets.
  • 3/4 cup alcohol vinegar.
  • 1/2 Cup of water from cooking the beets.
  • 1/2 Tsp mustard seeds.
  • 1/2 Tsp coriander seeds.
  • 1/4 tsp ground black pepper.
  • 1 tsp salt.
  • 4 Tbsp sugar.












Preparation

  • Preparation time: 10 Minutes.
  • Cooking time: 35 Minutes.


To begin we must wash the beets very well, and cook for about 30 to 40 minutes in boiling water, until tender, you will know because when you insert a fork and try to remove the beet, it falls out. Reserve some of the cooking water. Let stand and remove the skin, and cut to taste, personally I like to cut them into small cubes, it is easier to serve this way.




In another pot add 1/2 cup of the beets cooking water, vinegar, spices, salt and sugar, dissolve well and bring to a boil.




Once this mixture has boiled we turn off the fire, add the chopped beets in the sterilized glass jars and add the mixture of vinegar, water and spices, until the beets are covered, cover and let cool. In my case as I only made a small amount and it will surely run out fast, I just let it cool and take it to the refrigerator.



We let its flavors concentrate for one 3 or 4 days preferably, and we can enjoy this delicious explosion of flavors. With a delicious shawarma, a rich hamburger, or a good sandwich with vegetables, I'm sure you can enjoy this delicacy.

Remolachas Encurtidas, que son perfecta para acompañar un buen sándwich y porque no, una rica hamburguesa.



La primera vez que probé las remolachas encurtidas, fue hace unos 10 años en casa de una amiga cuyo esposo es sirio y consumía esto en cantidades industriales, recuerdo que ella preparaba un delicioso Kéfir y preparábamos unos shawarmas deliciosos a los que le agregábamos kéfir y remolachas encurtidas, el contraste de sabores es realmente delicioso. Lamentablemente en mi país, las remolachas encurtidas no son nada comunes de ver, y muy difícil de encontrar en un supermercado por lo que, si quieres consumirlas, debes prepararlas tú mismo por lo general.



El sabor dulce de las remolachas, con el ácido del vinagre y la combinación de sabores de las especias es realmente delicioso, acompáñame y te muestro como las prepare.

Ingredientes

  • 2 Remolachas medianas.
  • 3/4 Taza de vinagre de alcohol.
  • 1/2 Taza de agua de cocción de las remolachas.
  • 1/2 Cdta de mostaza en granos.
  • 1/2 Cdta de semillas de cilantro.
  • 1/4 Cdta de pimienta negra molid,a.
  • 1 Cdta de sal.
  • 4 Cdas, de azúcar.










Preparación

  • Tiempo de preparación: 10 Minutos.
  • Tiempo de cocción: 35 Minutos.


Para comenzar debemos lavar muyien las remolachas, y cocinamos por unos 30 o 40 minutos en agua hirviendo, hasta que estén tiernas, lo sabrás porque al introducir un tenedor y tratar de sacar la remolacha, esta se cae. Reservamos una parte del agua de la cocción. Dejamos reposar y quitamos la piel, y cortamos a gusto, personalmente me gusta cortarlas en cubos pequeñitos, es más fácil para servir de esta manera.



En otra olla agregamos 1/2 taza del agua de cocción de las remolachas, el vinagre, las especias, sal y azúcar, disolvemos bien y llevamos a hervor.



Una vez haya hervido esta mezcla apagamos el fuego, agregamos la remolacha picada en los frascos de vidrio esterilizados y agregamos la mezcla de vinagre, agua y especias, hasta cubrir las remolachas, tapamos y dejamos enfriar. En mi caso como solo hice una pequeña cantidad y seguramente se acabará rápido, solo dejo enfriar y llevo al refrigerador.



Dejamos que sus sabores se concentren por uno 3 o 4 días preferiblemente, y ya podemos disfrutar de esta deliciosa explosión de sabores. Con un delicioso shawarma, una rica hamburguesa, o un buen sándwich con vegetales, estoy segura de que podrás disfrutar de esta delicia.

Son deliciosas, incluso para agregarle a una ensalada, la verdad es que me gustan mas asi que de otra forma! Saludos

Yeahh great to see another fermentation, living food got a funky groove.

Ps. If you want to use less heat and cooking on the beets to preserve more of the heat sensitive nutrients, then instead of boiling them to soften it also helps to simply bring the brine water to a boil and add it to the jar of chopped beets and let it cool before adding any other veggies, that way they will soften nicely, but also not be cooked too much so that there is a loss of nutrients, that way you can also keep all the juice from the beets.

Did mine raw though this time for that extra crunch since the fermentation also softens the beets a little bit.
