Hola mis queridos compañeros de la comunidad de HIVE , en esta edición del blog traigo para ustedes compartir una receta familiar muy típica en las fechas navideñas; de este pastel en mi país existen muchas versiones, sin embargo, esta receta la aprendió mi abuela luego mi mamá y después a las hijas, y pues; ya se ha hecho tradición en realizar este platillo en épocas navideñas.
Hello my dear fellow members of the HIVE community, in this edition of the blog I bring for you to share a very typical family recipe for Christmas; of this cake in my country there are many versions, however, this recipe was learned by my grandmother, then my mother and then my daughters, and then; it has become a tradition to make this dish at Christmas time.
Los orígenes de quien le enseño a mi abuela sobre la realización del pastel lo desconozco, pero asumo que por vivir en una zona costera se criaron consumiendo productos del mar y por ende en esas fechas colocaban en práctica la elaboración de este tipo de alimentos. Sin profundizar tanto, que tal si nos vamos a la receta.
I don't know the origins of who taught my grandmother how to make the cake, but I assume that because they lived in a coastal area they grew up consuming seafood and therefore at that time they used to prepare this type of food. Without going so deep, what if we go to the recipe.
Los ingredientes son: ½ kilo de mojito de atún, ½ kilo de papas, ½ kilo de zanahorias, ¼ kilo de ramas verdes (cebollín, cebollas, pimentón, ají dulce, ajos), c/n de sal y pimienta, c/n de aceite, 3 kilos de plátanos maduros, ½ kilo de queso de cabra semiduro.
The ingredients are: ½ kilo of tuna mojito, ½ kilo of potatoes, ½ kilo of carrots, ¼ kilo of green branches (scallions, onions, paprika, aji dulce, garlic), c/n salt and pepper, c/n oil, 3 kilos of ripe plantains, ½ kilo of semi-hard goat cheese.
Preparación: se lavan, pelan y cortan en cuadritos todas las verduras y ramas verdes, se comienza por cocinar las papas, zanahorias y mojitos por separado en abundante agua con sal y pimienta, después de estar al dente las verduras se retirar del fuego, y se comienza a sofreír todos los aliños verdes, y se le va agregando las papas, zanahorias y el mojito anteriormente escurrido, y se rectifica la sal y pimienta, se deja cocinar a fuego lento por unos minutos para unir todos los sabores, ya estando listo se reserva y se comienza por cortar los plátanos en rodajas para luego freír.
Preparation: wash, peel and cut into squares all the vegetables and green branches, start by cooking the potatoes, carrots and mojitos separately in plenty of water with salt and pepper, after being al dente the vegetables are removed from the heat, and begin to fry all the green seasonings, and add the potatoes, carrots and the previously drained mojito, and adjust the salt and pepper, let it cook over low heat for a few minutes to unite all the flavors, once ready, set aside and begin to cut the plantains into slices and then fry.
Ya estando listo las tajadas y el mojito, se comienza a armar la bandeja se agrega un poco de mantequilla a la bandeja se coloca una capa de tajadas luego una capa del mojito y por último se le raya el queso de cabra, así se va repitiendo hasta llenar la bandeja y la capa final debe de quedar con queso, luego se lleva al horno a gratinar por 15 minutos, estando el horno precalentado, debe estar en temperatura medio-bajo, y listo a dejar enfriar un poco para luego servir.
Once the slices and the mojito are ready, start to assemble the tray, add a little butter to the tray, place a layer of slices, then a layer of mojito and finally add the goat cheese, repeating until the tray is full and the final layer should be with cheese, then take it to the oven to gratin for 15 minutes, being the oven preheated, it should be in medium-low temperature, and ready to let it cool a little and then serve.
Nosotros en casa acompañamos este pastel con hallacas, ensalada de gallina, y pan de jamón, acostumbramos a realizarlo en las cenas de los días 21 y 31 de Diciembre.
At home we accompany this cake with hallacas, chicken salad and ham bread, we usually make it for dinner on December 21 and 31.
