Enjoy lunch with fresh chicken soto broth

Hello culinary lovers. If you are bored with fish side dishes, you should cook this chicken, namely chicken soto. Chicken soto is a type of chicken soup that has a distinctive color, namely yellowish broth. This yellow color comes from the turmeric seasoning used. And the savory taste of the broth and rich in spices makes this dish special.

Did you know, chicken soto has 2 versions, namely the broth using coconut milk and without coconut milk. This time I made it without coconut milk, but the taste is no less delicious. Oh yeah, have you ever made it before, if not, let's see how to make it here




Ingredients needed:

  • 1 chicken cut into 4 pieces
  • 1/4 nutmeg
  • 1 segment of cinnamon
  • 2 pieces of cardamom
  • 1 seed star anise
  • 1 tbsp pepper powder
  • 1 stalk of lemongrass (crushed)
  • 3 bay leaves
  • 1 segment of galangal
  • 3 pieces of kaffir lime leaves
  • 1 tomato
  • To taste salt
  • 1/2 tsp flavoring (royco)
  • 1/4 tsp MSG

Fine spices


  • 4 cloves of shallots
  • 5 cloves of garlic
  • 2 segments of turmeric
  • 2 candlenuts
  • 3 tbsp coriander

Complements


  • 7 cloves of fried shallots
  • 3 potatoes
  • 250 grams of bean sprouts
  • 2 stalks of celery
  • 1 stalk of leek
  • 2 limes
  • 30 cayenne peppers



How to make:

First: boil 1.5 liters of water until boiling. Add the chicken, boil for 30 minutes. Remove and set the chicken aside in another container. Leave the chicken broth to be used as soto sauce

Second: prepare the fine spices. Before that, roast the ingredients such as coriander, candlenuts, garlic and turmeric (for a more fragrant soto sauce) also add shallots. Then puree the ingredients using a blender.

Third: heat the oil, saute the spices, add lemongrass, galangal, bay leaves and lime leaves, cook until fragrant. Set aside

Fourth: cut the tomatoes. Chop the celery and leek leaves. Set aside

Fifth: cook the chicken broth/broth again. Pour in the sauteed spices, add the spices, flavorings and salt. Correct the taste.

Sixth: it's time to prepare the complementary ingredients, peel the potatoes. Cut the potatoes into dice. Set aside. Chop the shallots for fried shallots.

Seventh: Heat the oil, fry the chicken, potatoes and shallots. Remove and drain. Shred the chicken.

Eighth: soak all the bean sprouts in hot water. Set aside. Cut the lime.

Ninth: let's make the chili sauce. Boil the chili peppers, mash them. Transfer to a container

You can mix the soto when you want to eat it, namely by adding shredded chicken, potatoes, bean sprouts and other complementary ingredients then pouring over the soto sauce. However, you can also mix it all directly when the sauce is almost cooked.

This yellow chicken soto tastes delicious and fresh. Serve it warm, it's even more delicious. Actually, the complementary ingredients can vary, you can add fried tofu, boiled eggs, fried tempeh, satay, it's even more delicious! Oh yeah, if you are on the team that likes spicy food, you can add fresh chili sauce according to taste. And also for the refreshing ingredient for our soto sauce today, don't forget to add lime juice.

Alhamdulillah, my husband and children like it, they even eat very greedily and scoop up the sauce to the last drop on their plates. Haha So I remember when I was in college, I often ate this soto soup in the campus canteen, it tasted really good, refreshing.. My friends and I usually order this chicken soto to be served with white rice, but sometimes chicken soto is also often served with lontong.
