I want to laugh at how I am relentless and desperate to learn how to make sourdough. This is quite an impressive part of me who turns out to have a relentless learning nature. You could say 'Ambitious'. Of course, being ambitious is not bad for learning something you want to know.
Really, I really want to know how sourdough works, maybe because I really like bread and I actually shouldn't use instant yeast too often, so, I really want to know it very deeply and far from all that. But sometimes, what we want doesn't always go smoothly like my experiment in making sourdough.
I really want to know how to make pizza dough from sourdough or levain, I like the hollow dough like I see on youtube and it's very beautiful. Then, at night I tried to make it before going to bed. An hour before my bedtime, I poured the active levain from the sourdough. In the process it is called autolyze to reduce the gluten in the flour and make it elastic and can be pulled without breaking. An important process but there was something stupid that happened when I made it, I immediately mixed butter between the autolyze process which ended up making my dough very moist.
In the morning, after I stored it in the refrigerator, I found a really wet dough. When pulled, there were lumps that would be very difficult to form into a pizza dough. That's why this time the sourdough pizza that I was going to make was very messy. I felt like crying but I didn't give up.
Then I tried to rack my brain and tried to make this dough enjoyable without having to throw away the existing ingredients. Zero food waste, doesn't that sound very good? I realized that food ingredients are bought with money and throwing them away is the same as throwing away money.
In my mind, I should have made pancakes. I only had a few ingredients in the refrigerator like the leftover shredded meat that I saved when making shredded meat bread yesterday. At least there was the right topping, of course I also had cheddar cheese in sheet form.
Okay, these are the ingredients I used:
- 150 gr levain
- 225 gr high protein flour
- 30 gr sugar
- 40 gr Butter
- 1 egg
- 5 gr salt
- Chicken floss
After the dough was baked on a pan that I had greased with butter, my kitchen was really very fragrant. You know how butter smells when it is heated, right?
Then I baked everything and gave it toppings. The chocolate cheese should have been very delicious at this time, however, I wanted to use up the remaining shredded meat. Shredded meat is one of the ingredients that does not last long, maybe the taste will be different. This chicken shredded meat is really very delicious and the price is also quite expensive. So, I don't have to throw it away and enjoy a pan of pancakes in the morning with a glass of coffee milk.
