Greetings from Dhaka Bangladesh. Today I am going to talk about preparing pickle of carandas- plum fruit. Today, I have no class in the morning. I have class in the afternoon. So I am free in the morning. I am thinking to do about pickle of carandas. So, I start to prepare it.
At first I wash the carandas fruit. Then I cut those carandas vertically. After that I remove the seeds from the carandas. I remove these seed by the help of a spoon
One the other hand my younger sister preparing a mixed spices. In Bengali it is called Pachphoron (It is a mixture of five spices. These five spices name are mustard, black cumin, fennel,coriander and fenugreek). To make the pickle this mixed spices must be needed.
At first she take a local frying pot which work like a frying pan. In bengali it is called 'korai'
She take 2 -3 spoon of Pachphoron and for the test of spicy she take two dry red chilli and one bayleaf. And put these spices in the frying pan. My 'korai' made of iron. I like to use this 'korai' for my frying purposes. She fry these spices at the low heat because, otherwise it will be burn.
After fry spices she leave it for cooling. And after cooling she blend it in the blender.
Then I take 2 spoon of sugar. And melt it. Here I use 2 spoon of sugar because I like sour test more than sweet. If you like sweet test more you can add more sugar. After melting the sugar I put into it those carandas -plum fruits. Then starring after 5 minutes I add salt into it.
When water become less I add mixed spices. After adding the mixed spices a smell is spreading around us. And the smell is so good. It looks delicious. Then I serve it. I and my younger sister taste it. The test is sour,sweet and spicy mixed.
We eat some pickle and rest of the pickle we leave it for colling. After cooling I store it in a jar. I am not use vinegar in this pickle. If you store this pickle for a month or more than a month you can put one table spoon of vinegar in it.
Before, this jar contain chia seed. Chia means strength. It's scientific name is salvia hispanica. I like to drink chia seed and halim seed mixed water.
