Thimble Cookies & Variations

As a home baker, my cookie tins were seldom empty when my kids were growing up; always looking for something to nibble on between schoolwork, sports, and playtime.

Back then, kids still played outdoors till the sun went down.
Unlike today, where most kids are glued to electronic devices, right, or wrong?
Just saying...

When the kids fled the nest, the cookie tins sometimes remained empty. Hubby was a diabetic, and I did not want to put too much temptation on the tea table.

The recipe I'm sharing with you today is called Thimble Cookies; some call them Thumbprint Cookies. This cookie dough does not contain much sugar, and when hubby was still here, I used diabetic jam, as he loved having a sweet treat every so often.

Thimble Cookies are rolled in crushed Cornflakes, with a jam-filled centre. The Cornflakes makes them super-crunchy, and the little jam in the centre is the bonus!

This versatile cookie dough requires very basic ingredients and can have variations on the theme.

One can add chocolate chips to the dough and make Choc Chip Cookies, or roll the little balls of dough into sprinkles of all kinds.

I was about to say I'd make these for some guests we're having to dinner this evening but I don't have cornflakes, but then I saw you can make them without. I have a son who really likes to bake stuff, so I think I'll ask him if he'd like to try these. They sure look tasty! I'm going to have to get some cornflakes!

So these were amazing! The kids said they were just like the cookies from the store and they were. So yummy!!

I hope you had time to take photos of the process for a post, perfect entry for this week's @qurator's Top Chef. Back in the days of #cookwithus there used to be a hashtag #myturn where we'd share our version of one of the cooks'/bakers' recipe. It was a fun concept.

We didn't take pictures of the process, but I bet he will make something else soon and we can enter that! Thanks for the heads up as he really likes to cook!

His biscuits sure looks good, just the right thickness, and baked to perfection!

He didn't work on any cookies today, so we'll have to try for next week and see what the new theme is! Thanks for making me aware of it! He cooks stuff all the time. I'm trying to get my 12 year old daughter more interested in cooking too, but it's slow going! Ha!

I had just posted and was dashing through to throw out some votes before I got up to get myself ready to go to Mom's for a visit. THEN I saw your cover photo with the beautiful cookies, so I had to come read first. :)

I am familiar with the name Thumbprint Cookies, but here that could mean several different kinds. In bakeries here, you were more likely to see a butter cookie with some colorful soft-set icing in the center. That is where I first ever saw any growing up.

As an adult, I had adapted the idea to a different recipe that has turned out to be one of my Mother's favorites. I use a pecan sandie recipe where I use ground fresh pecans in the butter cookie recipe and then fill the centers with almond flavored soft-set icing. Yum !

We also have a cookie recipe around here that is called Cornflake Cookies, but they actually have the crushed cornflakes inside the cookie dough. They are amazingly delicious and buttery, but they certainly won't be on the healthy side of things!

I may have to try your recipe soon. My Mom loves things with jams and jellies.

Wow @lizelle how lovely looking those cookies are. It looks like you could run a little cookie shop. I am not much of a baker and don't often get inspired to bake, but I tell you I am inspired to eat your cookies, just looking at them.

You must be making someone happy with those.

That cookies are really commendable Mam. They look great. I truly agree with the fact, children of yesteryears who used to spend more time playing until sunsets unlike todays kids, and go direct to the kitchen to have something yummy. I was also one among them. 🙂
