- Good evening hivefood friends, I hope you are having a wonderful Christmas! On this occasion, I am sharing with you the dish I prepared for family lunch, you can accompany it with steamed rice or baked plantains... Let's put on our aprons to make some exquisite "red beans with mixed vegetables".
- Buenas noches amigos de hivefood, espero estén pasando unas navidades maravillosas! En ésta ocasión, comparto con ustedes el plato que preparé para almorzar en familia, pueden acompañar con arroz al vapor o plátanos horneados... Pongámonos el delantal para realizar unas exquisitas "alubias rojas con vegetales mixtos".
- INGREDIENTS: bell pepper (red and green), onion, garlic cloves, potatoes, carrot, coriander, mint, red beans, pepper, cumin, celery powder and salt.
- INGREDIENTES: pimiento (rojo y verde), cebolla, dientes de ajo, patatas, zanahoria, cilantro, yerbabuena, alubias rojas, pimienta, comino, célery en polvo y sal.
- We cook our beans over "high" heat... We add enough water, in this step we DO NOT add salt.
- Cocinamos a fuego "alto" nuestras alubias... Colocamos suficiente agua, en éste paso NO añadimos sal.
- While we wait for the cooking time, we will prepare our delicious sofrito, which will be the main base for enjoying a VERY tasty and delicious dish... Sauté the onion, garlic cloves and pepper (finely chopped) in olive oil. Sauté until they acquire a crystalline texture.
- Mientras esperamos el tiempo de cocción vamos a preparar nuestra delicioso sofrito que será la base principal para disfrutar de un platillo MUY sabroso y delicioso... Sofreímos en aceite de oliva la cebolla, los dientes de ajo y el pimiento (finamente cortados). Salteamos hasta que adquieran una textura cristalina.
- Add the zucchini... Sauté until the skin is slightly browned. Set aside to use in the final step.
- Agregamos el calabacín... Salteamos hasta comprobar que su piel se doró un poco. Reservamos para utilizar en el paso final.
- When we see that the beans are "semi-soft", we add the "carrot" together with the "potatoes". We lower the heat and cook until they soften well.
- Cuando comprobemos que las alubias están "semi-blandas", integramos la "zanahoria", junto con las "patatas". Bajamos el fuego y cocinamos hasta que se ablanden bien.
- We add the onion, garlic and zucchini stir-fry... these ingredients will provide a "unique and special" flavor.
Incorporamos el sofrito de cebolla, ajo y calabacín... éstos ingredientes aportarán un sabor "único y especial".
- We add our aromatic coriander leaves... We season with: pepper, cumin, celery powder and salt. We mix until well combined, cover and cook on a "low" heat for 15 minutes, enough time for our dish to be well impregnated with the seasoning.
- Añadimos nuestras aromáticas hojas de cilantro... Aliñamos con: pimienta, comino, célery en polvo y sal. Mezclamos hasta integrar bien, tapamos y cocinamos a fuego "bajo" durante 15 minutos, tiempo suficiente para que nuestro plato se impregne bien con el condimento.

I quite like red beans also if I don't use them often, this recipe looks so yummy 😋
