Herbs not only add flavor and texture to foods, but also contain abundant sources of antioxidants, vitamins, minerals and unique medicinal properties. Certain herbs and spices can even help you maintain a healthy body weight, as they promote weight loss.
The "herbs" and "spices" are often used interchangeably, however,
there are differences between them. Herbs collected from the leaves of herbal plants are used in large quantities unlike spices. The spices
on the contrary come from the roots, flowers, fruits, seeds or barks
and are commonly used in small quantities than the herbs given to
their higher potency and stronger taste.
They could also come in the form of essences or extracts. Essential oils require large amounts of plant materials and need to be diluted before use, as they are concentrated. On the other hand, oil extracts only use a small amount of plant material and do not have to be diluted.
Essential oils can be used in different ways, including in aromatherapy, massages, adding them to the water for bathing, in compresses or burning them in a diffuser.

In general, it is better to use fresh herbs than to buy processed varieties, since the excessive use of any food or healthy product could be accompanied by a risk to health. Herbal oils should be used sparingly, and are NOT a substitute for a nutritious and balanced diet. Pregnant women, in particular, need to consult with their doctor before consuming or using these oils.
