Hello dear foodies! It's time to practice my kitchen English and learn how to post recipes.
Today I'm going to share with you the recipe of my homemade pizza sauce and a vegan pizza made with whole grain spelt flour and veggies from the garden.
Whole Grain Spelt Flour
This is the first time I'm using spelt flour and am very satisfied with the result. Spelt has a long history, it's cultivated for a very long time, since 5000 BC (1).
Although spelt is not gluten free, it's a great alternative to wheat because gluten in spelt isn't as strong as wheat gluten.
You can use whole grain spelt flour for baking without mixing it with other flours it's a great way of getting more whole grain fiber into your diet.
Spelt is rich in vitamin E and B-complex vitamins, selenium, magnesium, calcium, iron, manganese, zinc (2).
Homemade Pizza Sauce
I don't like to buy ketchup or pizza sauce from the supermarket, I'd rather make my own. This is the recipe I used to make my pizza sauce this year. Basically this was an experiment, I wanted to make something from scratch and put together the ingredients myself. It's great, what can I say :) I love it.
Ingredients:
- 2 L of homemade tomato juice (I made mine using my homegrown tomatoes),
- 4 - 5 red paprika finely diced and minced,
- 3 medium onions finely diced and minced,
- 1 bay leaf,
- 10 peppercorn seeds (mixed red, white and black),
- 1 tablespoon dried oregano,
- 3 cloves garlic peeled and minced,
- 1 teaspoon salt,
- 3 tablespoon extra virgin olive oil.
Heat the extra virgin olive oil, add the onions and saute. Add the garlic and saute max. one minute. Add the paprika and saute another minute or two. Add the tomato juice, bay leaf, oregano, salt and pepper.
Simmer on a low flame, stirring often till you get the necessary density. It took me more than one our, I wanted my sauce more dense. Put it in jars, cover the jars till they cool off.
Homemade Spelt Flour Vegan Pizza With Tomato, Paprika And Onion
Fair warning, this is not a fancy looking pizza you can see in magazines or television. This is about using what you have in the garden, regarding vegetables and my own homemade tomato sauce.
Ingredients:
- 500 g whole grain spelt flour,
- 2.5 g fresh yeast,
- 2 teaspoon salt,
- 250 ml tepid water,
- 1/2 teaspoon sugar,
- 3 tablespoon olive oil
For the top:
- pizza sauce (homemade for me)
- oregano,
- tomato,
- red paprika,
- yellow paprika,
- onion.
Add the fresh yeast to 150 ml tepid water, add sugar and a pinch of flour, mix it together and let it rise for 5 - 7 minutes at a warm place.
Mix the flour, salt and oil in a mixing bowl, add the yeast and mix it together till you get a soft and elastic dough. Add the remaining tepid water and some extra flour if necessary.
Cover dough with a clean kitchen cloth and put to rise in a warm place for 30 minutes.
Get the dough out, place it on your working surface, add a bit of flour and roll out into two rectangles and place on two baking trays covered with baking sheets.
Spread the tomato sauce over the dough, add oregano or other herbs, cover with sliced tomato, paprika and onion.
Place it in a preheated oven, bake for approximately 30 minuets, until the base has cooked and it's brownish.

It looks delicious! Tomatoes are bountiful right now, aren't they? I find that I'm using them in everything. I made a big pot of chili using garden tomatoes and then froze individual portions so that I have easy lunches when the weather gets cooler.
Thank you my dear melinda! Tomatoes are bountiful indeed, pretty much good for every recipe, no matter if it is a soup or something else. It has a lot of good qualities and it's healthy. Sometimes I froze food too, it's great when I don't have time too cook.

Well, each Monday is #fruitsandveggiesmonday for and I love it. I'm always posting something strange, specific to my region and would never miss it, except for two or three times, when I was not able to post or needed a short brake from it. I'm glad you like my pizza recipe and maybe the pizza sauce as well. it's easy to prepare it and it's healthy too :)
I do like healthy foods and this was one of those :) Am glad you experience different posts each time, this gives diversity which is very rare now a days. Each Monday? I thought I could see a similar healthy post each day :D I'l have to wait till its next Monday to see another one of these, which is quite fine as it will be a worth waiting am sure :)
You can see all kind of health posts here on Steemit. Many people are posting food recipes, especially vegans. I'm only posting on Monday for this contest. There are so many topics to cover that I don't think it would be good to post only food.
The other thing that needs to be considered is the number of posts per person per day. Some people are posting almost every two hours which in my humble opinion is way too much. So, in other words, balance is the key to everything, right? Anyway, have a nice day!

Well, it depends, some people have more free time, others less and depends on prioritising as well. This week I have more free time, next week will hardly have any, so ... you know how it is. I'm trying to do my best this week because next week I wont make the list, that's for sure :)
And posting depends on quality as well. You can post garbage every two hours or you can make one good post and get ten times more for that :)
I agree, this is how it usually is the case with most of the people here, I could post only twice the whole last week but I already have about 4 posts this week, It depends on how life is treating you.
I have learnt this from @janton one meaningful post a day is better than 10 meaningless posts each day, you may grow faster but that won't make any sense. We are on same track here

I must say I've tried vegan pizza before and it was a shock for me how good it was! Totally coping this to try at home
Vegan pizza 🍕can be very tasty 😊 I love it with sweet corn 🌽 but didn't have any when I made this.
I have to try spelt flour for pizza. It would go down better than gluten four. Those tomatoes look divine. I am sure they are most tasty!

I don't need fancy with ingredients this fresh and delicious! I can only imagine how wonderful this must taste with all of your garden goodies. I really enjoy using spelt flour, as well. Which reminds me...I haven't baked anything in a while. Might be about time!
This is another proof that Lena's contest is an excellent one with many benefits, right? We get to see all kind of recipes, learn a whole lot by reading other people's post and occasionally it reminds us that we have neglected baking :D

Yes, it's been hot here too so that is a big reason to leave the oven off most of the time. ;)
I probably bake muffins most often, but now that pumpkin spice everything is hitting the shelves here in the US I am starting to crave some pumpkin bread. Yeah, I think that might be the ticket. I have a big bag of sprouted spelt flour just waiting to be transformed!
It's excellent for pancakes and crepe!

I don't know, many people prefer takeaways, frozen pizza in the box or just order from their favourite place. It's easier and way more quicker than making it at home 😀
But that's not me. I love pizza made by professional pizza makers, frozen, boxed pizza not so much. Those are horrible.
But my homemade pizza 🍕 is the best for me 😀
Anything homemade s the best even over professional, in my opinion. I can taste the love and effort in home meals that professional meals lack 🤷🏼♀️

I'm craving pizza now, homemade pizza always creates this special feeling inside me, and it tastes even better than the ones in restaurants! I haven't made pizza using spelt flower (yet), but I'll have to try it. :) How about that pizza sauce, how long can you store it in the fridge?
I'm strongly recommend spelt flour for everything, it's great! For pizza is especially good.
I don't store these sauces in the fridge. I have a special storage room next to the kitchen which is for food only. This is very common in Eastern Europe. This room is full of jars containing jam, pickles and all kind of homemade sauces made by me :) So if you do it right, you can store it in your kitchen cupboard if the jar is not open. After it is opened, must be stored in the fridge.
Hey, there are some houses with those storage rooms here in Finland too, mostly in older houses, though! I'd love to see all those jams and sauces you have there, it must be quite a collection! It makes sense to keep the sauce in the cupboard before opening it, now I feel a bit dumb for asking it, haha! Thanks for the answer anyway! :)
Don't feel dumb for asking :) Each country has its own habits. If you are building your own house, you can make a storage room just for food. Here in Romania, apartment buildings are built with this storage room for many years with a very good reason. I don't know how much you know about Romania or any other Eastern European country, but during communist time, there has been food shortages and people were cooking, baking and preparing food for rainy days and these storage rooms were needed. Stores were almost empty all the time, you got 10 eggs, 1 kg sugar, 1 kg flour, 1 L oil , 1 kg pork, 1 kg chicken a month, half kg bread per person. So life was tough! We've learned to prepare everything from scratch and use what we could get staying in line for hours, pushing, shoving etc. We made jams and zakusca during summer so we can have them during winter. I was a kid but still remember those ugly times :)
Looking at the past can bring some tough memories to handle, but there's also a lot to learn from those times. Like you mentioned, everything was prepared from the scratch, and people definitely were using every bit of food they got in hand. Nowadays people are buying a lot of heavily processed food, since it's "easier", and the amount of food waste is really shocking! It's quite depressing to watch.
By the way, I had to google what zakusca is, and it looks and seems really delicious! 😋
