Daily Menu: Wednesday - Lectin free vegetable pot

Wednesday is mid-week so I usually either prepare this huge vegetable pot or just kale with potatoes and add some simple meat dish.

This is a quick overview of the vegetable pot.

Vegetable pot:

  • fry onions with any any sort of the meat ( add sausages if they are additive free, it tastes better)
  • and add all root vegetables : carrot, yellow carrot, any sort of a root like sweet potatoes or turnip, leeks... etc
  • add savoy cabbage ( kale) cut in stripes, or any sort of cabbage plant
  • boil potatoes separately and add, or add starch made pasta at the end of cooking to make it easier
  • Cauli flower and broccoli add at the end not to fall apart.

Short instructions:

You do not need to use peppers, tomato, zucchini, pumpkins but if you want...

  • Do not use peppers, zucchini, tomatoes UNLESS peeled, deseeded, cooked separately.
  • Tomato and pepper cut in half, remove seeds, cook, peels fall off, drain water, add in pot.
  • Don't use the pepper powder unless certain it is made without peel.
  • Any spices used check for content IF it has anything with lectin - usually spices are safe.
  • Beans, pees, soy all have lectin. I don't use them for a vegetable pot.
