Mother's Day Vanilla Cupcakes with Honey Lavender Purple Buttercream Frosting - RECIPE & PHOTOS!

Mother's Day is celebrated at various times of the year around the world, but most commonly during the months of March to May. Here in the USA Mother's Day is celebrated on the second Sunday in May.

These cupcakes are perfect to make for your mom or a mom you want to celebrate with on Mother's Day - they're light, filled with flavors of vanilla, honey and lavender. Checkout the ingredients and directions below to make this recipe!

Ingredients:

Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 large eggs, at room temperature
  • 2/3 cup sugar
  • 1 1/2 sticks (12 tbs), melted
  • 2 tsp vanilla extract
  • 1/2 cup milk

Frosting

  • 2 sticks butter, softened
  • 4 cups confectioners’ sugar
  • 2-3 tablespoons milk
  • 2 small drops violet gel food coloring
  • 2 tablespoons honey
  • 2 tablespoons dried lavender
  • Flower Baking Cups

Directions

Cupcakes

  • Preheat the oven to 350° F. Line one 12-cup standard muffin tin with cupcake liner.
  • Whisk flour, baking powder and salt together in a medium bowl.
  • In another bowl, beat eggs and sugar with your electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the melted butter and vanilla extract.
  • While mixing slowly, add half of the flour mixture. Then add all of the milk, followed by the remaining flour mixture; take care not to over mix the batter.
  • Pour the batter evenly among the lined muffin tins.
  • Bake until a toothpick inserted into the center of the cupcakes comes out clean, 18 to 20 minutes – rotating the tin about halfway through baking time. Cool the cupcakes in the tin, on a baking rack for 10 minutes, then remove them from the tin and cool on the rack completely.

Purple Buttercream Frosting

  • Using an electric mixer, start beating butter, sugar, and milk on medium speed. Gradually increase the speed to high and you will see your buttercream starting to take form. It is ready once it forms stiff peaks.
  • Color buttercream with violet gel food coloring then fold in honey.
  • Using a piping bag, frost each cupcake. Top with dried lavender and serve.
