So, my week started off on the right foot.
But, tonight I messed it up ALREADY.
I shouldn’t beat myself up about it though…
As you can see from my first post (Introduction To Me), one of the main things I would like to focus on is to get rid of all the rubbish I’m shovelling in to my mouth (food, not actual rubbish).
On Sunday, the shopping arrived and I had specifically ordered ingredients to make salads for the week. And they were lovely! Every day we had something slightly different, and even my boyfriend – who hates all green foods apparently – seemed to enjoy them.
I even went in to work today with the wonderful quinoa salad I’ve pictured below (recipe to follow shortly). I got home from work, and what did I do??
I ordered a pizza.
I’ve already started showing cracks. So those of you who have already started following me…

I’m sorry that I have already let you down on day 2.
The whole point in this is that I’m supposed to be controlling these cravings so I will hopefully get better if you’re patient with me 🙂
Anyway, I will now tell you the recipe for my lovely experimental quinoa salad. Very, very healthy.
Quinoa Salad
Ingredients
Tricolour quinoa
Rotisserie chicken (shredded)
Vegetable stock cube
Cherry tomatoes
Spring onions
Avocado
Feta
Balsamic Glaze
Pop your quinoa into a pan of boiling water with a stock cube and leave it to expand. Whilst you are waiting, chop up all the veg and feta and shred up your chicken. Once your quinoa is ready to go, stir everything in and pop it into a bowl. Drizzle a bit of glaze on top and you’re good to go!
