CRUSHED PEAS WITH MINT AND LEMON
This is one of my favourite recipes for spicing up my veg. It goes beautifully with white fish or lamb.
Makes 2 - 3 servings
Ingredients:
200g peas
200g broad beans
1/2 bunch of mint
1 - 3 chillis (to your spice level)
1 lemon, zest AND juice
1 tbsp olive oil
Method:
Set the broad beans and peas to boil with the stems of the mint. These will only need to boil for four minutes.
As they boil, chop the mint leaves and chillis very finely and mix them together with the zest and juice of the lemon. Top that off with olive oil, salt and pepper and mix.
Once the beans and peas have finished boiling, drain them and add the minty mix, stir in, and finally use a potato masher or fork to crush the beans and peas slightly.
Again, serve with lamb or white fish.
This is one of my favourite side dishes that I adapted from Jamie Oliver, and it's ready in four minutes!
