In a large bowl, you will mix
1 to 2 scoop of your protein powder ( depending on the protein serving
1 teaspoon of vanilla extract
1/4 teaspoon of baking powder
1 table spoon of stevia ( optional)
1 egg
water ( you will add enough water to make it look like a cake batter )
pour batter in to cup cake holders half the way full ( make three small cup cakes)
put them in the Microwave for 1 min 30 sec or bake at 350 for 10 min
let cool and top them with cream cheese Icing

Mix in a large bowl
2 table spoons of room temp cream cheese
1 teaspoon of vanilla
1 table spoon of stevia
mix well till smoothie
put in refrirater while muffin cook.
What kind of protein powder do you use for these? Flavored?
I am using coconut protein. However, I find any type of protein works as long as you use egg. The egg helps it hold together .
