Ingredients:
Protein:
1/2 lb ground beef
1/2 lb ground spicy Italian sausage
Vegetables:
1 large white onion, chopped (1/2 if using a large onion)
3 garlic cloves, minced
Canned and Jarred:
2 cans (14 oz each) fire-roasted diced tomatoes
1 jar (24 oz) spaghetti sauce (Rao's recommended)
Liquids:
4 cups vegetable broth
1/4 cup heavy cream
Pasta:
3 cups pasta (Mafalda recommended, but any small pasta works)
Seasonings:
2 tbsp tomato paste
2 tbsp Calabrian chilis (Trader Joe's recommended)
1 tsp dried oregano
1 tsp dried parsley
Salt and pepper to taste
Cheese Mix (for topping):
3/4 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
Garnish:
Fresh basil leaves, chopped (optional)
Equipment:
Large soup pot or Dutch oven
Wooden spoon
Knife and cutting board
Measuring cups and spoons
Medium mixing bowl
Instructions:
Brown the Meat:
Heat a large soup pot over medium heat and add a drizzle of olive oil.
Add the ground beef and spicy Italian sausage. Cook until browned and fully cooked through, breaking the meat into small pieces as it cooks. Remove the meat from the pot and set aside.
Sauté the Vegetables:
In the same pot, add the chopped onion and sauté for 5-6 minutes until softened.
Add the minced garlic and sauté for another 2 minutes until fragrant.
Combine and Simmer:
Add the diced tomatoes, jarred spaghetti sauce, vegetable broth, tomato paste, Calabrian chilis, heavy cream, dried oregano, and dried parsley to the pot. Stir well to combine.
Return the browned meat to the pot and bring the soup to a light boil.
Cook the Pasta:
Once the soup reaches a boil, add the pasta. Stir well, cover the pot, and cook until the pasta is al dente, about 15 minutes.
Prepare the Cheese Mixture:
While the pasta is cooking, mix the ricotta, mozzarella, and Parmesan cheeses in a medium bowl. Set aside.
Finish and Serve:
Once the pasta is cooked, check for seasoning and adjust with salt and pepper if needed.
Ladle the soup into bowls and add a generous scoop of the cheese mixture on top.
Garnish with fresh basil if desired.
