Got Old Rice?...Recycle and Enhance it with Oyster Mushrooms!

I messed up with this content because it is still unfinished ...I accidentally clicked ENTER and it got published! SH.T happens! and it happened to me just a while ago..Lolols!

At any rate, I was meaning to say that this rice had been a day old and I happened to have bought fresh oyster mushrooms at my favorite turkish mini market. I can get it cheaper there for about 4 Euros per kilo , Most of the big supermarkets sell this type at 2.00 Euros for 250 grams.

Oyster Mushrooms

The best thing with this type of mushroom is that it taste like meat, and you would think you are eating pork. It does not cost that much at 4 Euros per kilo, that´s why I always buy this at my fave turkish store whenever I have the chance. Simply tear each piece elongated with your fingers, then place in a bowl and sprinkle them with soy sauce, fry in oil until they get brown and voila! it is done. With so little ingredients, you always have this yummy dish without meat. Below please find the procedures on how I do it!. Hope you would try this.

Fried Rice With Oyster Mushrooms

Ingredients:

Oyster Mushroom - 2 cups, torn to pieces by hand
Rice from the day before , about 3 cups ( newly cooked Risotto rice will also do)
Red Onion, peeled and cut into pieces
1 cup cherry tomatoes, halved
2 cloves garlic, crushed
2 stalks of spring onions leaves (optional for the color)
soy sauce
teriyaki sauce
salt
black ground pepper
olive oil ( sunflower oil will also do)

Procedures:

1...In a container marinate the oyster mushroom with 1 1/2 tablespoons soy sauce, mix with the hand until all are coated and let it soak for about 15 minutes. In a hot pan with 2 tablespoons cooking oil, sautée the mushrooms until golden brown in color. Transfer to a plate and set aside for later use.

2... Using the same hot pan with 2 tablespoons cooking oil, fry the crushed garlic, followed by the onions and spring onion leaves until all have become soft. Add the rice as well as the mushrooms in the pan, mix until all are well blended.

The mushrooms will add color to the rice. Sprinkle 2 tablespoons teriyake sauce, mix properly to blend the sauce into the rice. Adjust the taste with salt and pepper according to your taste preference.

3... Arrange into a bowl and garnish with cut spring onions. Serve hot.

This looks super yummy. I don't have old rice but I have uncooked rice and oyster mushrooms. This inspires me to do a rice and mushroom breakfast. I am too lazy though haha.😊

Hmm easy peasy but yumminess and healthy. I wanna try this but just use cauliflower rice instead of rice for I practice life without rice for month now
