Before I am going further showing you what I made,
I have to apologize to Italians, mostly because my tagliatelle is venti-sized ๐
I used to be one of those people who thought making pasta was such a work and not worth it. Iโd rather grab a 3$ pack of pasta available at the store than having to knead and make it from flour and egg. But guess what? The fresh hand-made pasta shouldnโt scare you, itโs very easy to make and even someone like me could make it! That just means, you could too. All you need for a portion of a person is flour and 1 large egg. Simple, right? And it only takes an hour of your time to make a complete dish with fresh-handmade and homemade pasta.
For dinner today, thatโs what I decided to make. I find that cooking is such a stress reliever activity. By kneading the dough itโs like punching away all the negative energy. The thing is, the pasta I made today was bigger in size and it was a bit too thick. I also forgot the fact that these would grow in size when boiled.
If you ask me how to make it? I was just following this recipe Homemade tagliatelle. But making it into a dish was my own signature of shrimp pasta or scampi but fusion. I said that just because I am using available ingredients at my home and itโs far from the original scampi that you probably know of. Although I stick to plenty of garlic which I know, itโs one of the most important ingredients in Italian cooking, especially pasta.
As you see above, that was how my tagliatelle turned out. The scampi that I made was using margarine instead of butter but I still added a generous amount of lemon juice and zest for extra flavors.
I got the shrimp from my aunt yesterday and we had a lot of them. Itโs big and so juicy. It was simply perfect to be added to my tagliatelle. As for seasoning, itโs very simple, salt, pepper and a bit of chili powder for extra taste.

My mom said that the pasta tasted good but itโs too big. I told her that it was my first time and I would do better next time considering that the table I work from was too small. I will also have to clean up my momโs pasta maker so I can make a decent and thinner tagliatelle next time. I find that itโs actually pretty simple and healthier than the store-bought pasta which has even more preservatives. Sure, itโs a bit of work to make it from a fresh-ingredients but itโs super worth it especially if you have more time to make it. I do recommend that you make in bigger batches so you could save some because it tastes that good when you combine with the other right ingredients and just wants to make you crave more!

As an Italian and as a chef, I must confess that the pasta is a bit thick and the slice should be narrower, but I was amazed that you made the pasta yourself, you were really good at making pasta at home, great job. The condiment looks very tasty ;).
๐ will have to do better next time and get my pasta maker cleaned. At least with the help of them I can make the dough a bit thinner instead using regular rolling pin which requires more effort. While I was making these, I think about admirable Italian moms who made home-made pasta, certainly, it's not an easy work.
The pasta machine gives you a great help, it's all the same level, but I respect you for making it by hand with a rolling pin, I'm also not very good with handmade pasta, it takes strange shapes :D.
Instead my partner @giovi86 is very good with pasta, but she has gained a lot of experience over time. Anyway congratulations, keep making pasta by hand ;). Have a nice evening.

Well, those look amazing and must've tasted wonderful too. I can even imagine the flavor! Congratulations on this breakthrough! I've only eaten homemade pasta once in my life, I wish I could that more often, it's just delicious!
It's definitely rewarding to make your own pasta. Honestly I have a rule to only experiment with cooking during the weekend but that dinner was an exception๐
your pasta caught my attention because of... the shrimp. Sorry I just love shrimp too much that's why. I haven't tried home-made pasta so I don't know how difference they can get. But I love to play with the dough though. Normally my husband is the one who prepare this kind of dish so I didn't have the change to touch the dough. We often have tarta or pizza so he made the base from scratch. One day I got into the kitchen and started playing with the dough and it feel so good. Do you think we can make pasta without the machine?
Yes! you don't have to use any pasta maker. That one above doesn't use it and as long as you roll it a bit more thinly, that should be good. Perhaps this time you can surprise your husband by making this simple pasta? and Valentine's coming up so it's great time to do that ๐

P.S. Your mom is a tough critic ( when it comes to cooking ) but I knew that already ;^)
๐ Nothing will ever tastes right or look right according to my mom. I made Ogura Durian Cake but though others said it's good, my mom was like, " nope, something is still missing". And yes! you don't have to use a pasta maker. Just remember that for every 100g of flour, you have to add 1 egg. In that recipe above, I use 1 egg and 100g flour, something I didn't include above๐. Just make sure to roll it evenly and thinner. Then fold and slice with kitchen knife. You can either just make Aglio e Olio or scampi. Anything goes really but it's super satisfying when you can make it.
