Mentioning carrots and candy in one breath just doesn't gel now does it? Right or wrong?
Candy's main ingredient is...sugar...and everything else that really does not give any nutritional value whatsoever.
Nothing wrong with having a guilty treat now and then, but how about a guilt-free candy that has as its main ingredients fruits and a veggie most kids turn their noses up - Carrots, Apples, Oranges and Lemons.
I have to credit this recipe to a gorgeous little book that's filled to the brim with deliciously different gift recipes - Geskenkresepte (Gift Recipes) by Annette Human.
I must confess one of my favourites is Caramel Fudge; but I can just manage one piece of that - talk about a sugar rush!
Back to a healthier candy - only drawback is that it has to cook quite a bit longer than fudge or it will not set!
The green Apples and Lemon Juice makes it taste almost like the sour sweets yours truly loves; except they encourage her reflux in a bad bad way so they've been off limits for quite some time now!
Carrot & Apple Jujubes
- 2 cups grated Carrots
- 2 cups grated Green Apples
- 1 cup freshly squeezed Orange Juice
- 1/2 cup freshly squeezed Lemon Juice
- 1 cup Xylitol or other Sugar replacement (plus extra for rolling candy in)
Place all except Xylitol in a heavy based pot and cook over a medium heat till it becomes mushy.
Add Xylitol and stir to melt, continue cooking whilst stirring from time to time till mixture does not stick to the sides of the pot.
Note be patient at this stage or your candy will not set!
Spoon into sprayed pan and smooth top, leave to cool before cutting into small squares, roll in Xylitol.
These healthier jujubes tasted so much nicer that the ones with artificial flavouring - carrot & apple really go well together.

I love carrot and apple together! I would never have thought of using them in this manner, but I bet it is absolutely delicious! My dad loves carrot cake, but I bet he would like these for a nice light treat, too. I'm going to have to remember to try these soon!
Apples and carrots are a nice combo in many things not so and carrot cake is one of my favourites too;) Just remember you'll need patience as it takes quite a long while to get to the setting stage but was worth it! Thanks for stopping by @plantstoplanks:)

Hi @lizelle. What a delicious carb friendly dessert. I think I might add this recipe to my list and share with my siblings on our Diabetic quest to find good eats. All made with my favorite fruits, and of course, I love carrots.
I usually cook carrots in place of sweet potato. Delicious alternative.

Carrots and apples do pair well, I use it in smoothies and juices but thus this was the first time I made a sweet with it, hubby enjoyed it! Thanks for popping in:)

Those look great, and though I haven't actually tasted them, I can imagine how they must taste, putting the three main ingredients together in my mind, along with the xylitol. I use xylitol quite a bit. It's a great sweetener alternative to sugar and doesn't taste weird!

Tasty treats that are healthy, reminds me of date balls with coconut we got as children, don't see the old original recipes as much as one used to @lizelle
Oh those date balls are my absolute favorites, actually made them last week for my ADSactly post and wondered why I don't make them more often! These apple and carrot jujubes were really nice, think its an old recipe. Thanks for stopping by @joanstewart:)

I might need to try this, but will need to find somethign other than Zylitol, which has an adverse effect on my son. A healthy candy definitely needs to be tried though!

Oh my word, don't you get apples in your country? It's one of the fruit we have year round so just take it for granted! Thanks for popping in:)
We do have apples, although they are imported, and they cost an arm and a leg. At about 3$ a piece, that would mean to spend half a month salary for the average folk.
They used to be abundant and cheap, the same with grapes, and people bought them especially in december as part of the traditions. Now they are a luxury that separates the have from the have nots
