In all companies that are dedicated to the handling and transformation of food, having manuals of standards and procedures is a determining and fundamental factor for the development and future success of the same, because any worker who passes through the departments of food processing and production will have to adhere to these manuals to comply with the standards and that the final product is the same in all processes.

On the other hand, in some organizations there may also be a series of procedure manuals for the elaboration of products, however, they must be very clear about which are the correct ones for a certain process as well as for the geographical areas where the products will be distributed, and also if they will be exported or not, so their codification must be a very important point for the organization, since the procedure manuals are a key factor to develop with accuracy and precision the activities in the production line.

It is important to emphasize that the procedure manuals are a detailed guide to develop a certain process, and these follow an appropriate methodology, as they show us the necessary information that must be present in each of the members of a particular department that will influence directly or indirectly in any production line in organizations, so it can be said that they are made specifying all the steps to the end of the process in an appropriate manner.

In some opportunities, the personnel that manipulates and operates equipment can commit errors that have been alarming, affecting directly in damages to the machinery, that in spite of the fact that such damages can be diminished and solved by the maintenance department in its moment, because they have affected the equipment and problems appear in moments of full production, causing stops that can last from minutes to hours.

The application of the processes in an incorrect way, will bring certain operational problems in the different production lines and will cause some workers to have doubts regarding their responsibility, as well as the action that must be exercised in each of the processes, and will also bring with it a series of very serious economic and administrative inconveniences for the company.
